Tapioca/sago coffee pudding shots

I was introduced to bubble tea by a friend last year and I absolutely fell in love with it. I do not have tea or coffee regularly but once in a while, I do enjoy it! When I came across some videos of how to make bubble tea from scratch, I was intrigued. Why am I telling you all this? Because bubble tea is where my inspiration for this dessert drink came from.


The bubbles in bubble tea are made from tapioca pearls. Instead of making these from scratch, I used the biggest tapioca peals that I was able to find in the store. It was rather easy to make and tasted amazing. If you are a coffee lover or like coffee flavoured desserts, you will love it.


The best part about this dessert is that you can customise it based on your preference. Depending on how you like your coffee, you can increase or decrease the amount of coffee in this recipe. You can add a little more sweeter if you want. You can also serve it warm, at room temperature or chilled! All of this will work!


Ingredients:


1/4 cup - Tapioca pearls/Sago/Sabudana

2 tbsp - Jaggery or coconut sugar

1/2 cup - Water

1/2 cup - Expresso or 1 tbsp - Instant coffee dissolved in 1/2 cup - water

1/4 cup - Coconut cream


Method:

  • Wash the tapioca pearls to get rid of any broken tapioca pieces. Soak it in the coffee overnight or at least for a couple of hours. This will reduce the cooking time.

  • Pour the soaked tapioca and the soaking liquid in a sauce pan. Add the water and place it over heat.

  • Cook the mixture until tapioca pearls become translucent.

  • Stir in the jaggery/coconut sugar and take the pan off heat.

  • Let the pudding cool to room temperature. You can also chill it in the fridge for some time.

  • Once the pudding is cool, pour it into small glasses. Top it with coconut cream (as much or as less as you would prefer) and enjoy this coffee rich dessert.

This is a very light and refreshing dessert that happens to be completely plant based and also gluten free. Making it is a piece of cake, or as easy as having a piece of cake. Do give it a try if like the sound of this dessert and let me know if you liked it.
